Lemon and Herb Roasted Chicken and Potatoes

Last weekend we roasted a chicken for lunch and I thought I would share the recipe.

We cut the chicken down the spine and opened it out. Make sure to wash it thoroughly. Place it in a tin with cut potatoes, onions and garlic and cover with fresh lemon juice, black pepper and herbs. Cover in foil and place in the oven on a low heat (gas mark 3) for 2-3 hours depending on the size of the chicken.

DSC06634After the 2-3 hours make sure the chicken is cook all the way through and place back in the oven on a higher heat (and without the foil) to brown the chicken and potatoes. Cook for another 20-40 minutes.

It tastes delicious! Serve as it is or with steamed vegetables.
